docs: add visual catalog and screenshots for all dashboard surfaces and widgets

Add full visual catalog in SCREENSHOTS.md with corresponding captured screenshots
for all Homarr core dashboard surfaces, administration modules, and all 55 widget
interfaces (preview, edit mode, settings, advanced settings, and dimensions).
