Thomas Camlong ff9177db17 feat(seed): add demo mode with pre-seeded user ...

- Add `seedDemoUserAsync` that creates a demo user (demo/demo) with admin
  group, default board, and completed onboarding when `DEMO_MODE=true`
- Add `.env` and `apps/nextjs/.next` to `.dockerignore` to prevent local
  dev config and build cache from leaking into the Docker build context
